2. Place crust in an ungreased 9-inch glass pie plate as directed on the package for a l-trust filled pie.
3. Coarsely chop sausage. Cook and stir sausage, onion and jalapenos in a large skillet over medium-high heat until the vegetables are tender. Remove from the heat.
4. In a large bowl, beat egg product, milk, cumin, salt and pepper until blended. Stir in the sausage mixture and cheese. Pour into the piecrust.
5. Bake for 45-50 minutes, or until the eggs are set. Makes 8 servings.
Variations Cheddar: Substitute ½ cup chopped red bell pepper for the jalapenos. Omit the cumin. Substitute shredded Cheddar for the Mexican cheese blend.
Mediterranean: Substitute 1 cup chopped mushrooms for the jalapenos. Omit the cumin. Add ½ cup chopped roasted red peppers or sun-dried tomatoes and 1 teaspoon dried basil. Substitute shredded Italian cheese blend for the Mexican cheese blend.
