Chocolate Lava Cake
INGREDIENTS
- ☐ 2 large eggs
- ☐ 2 large egg yolks
- ☐ ½ cup unsalted butter
- ☐ 1 tablespoon all purpose flour
- ☐ ¼ cup granulated sugar
- ☐ 3.5 - 4 oz bittersweet dark chocolate (70% cacao)
- ☐ ½ teaspoon (vanilla extract
- ☐ A pinch salt
- ☐ Powdered sugar for topping
PREPARATION
- Melt chocolate with unsalted butter in microwave.
- In a large mixing bowl, add eggs, yolks, granulated sugar, and a pinch of salt.
- Mix ingredients for 1 minute with a hand mixer using medium speed.
- SLOWLY pour-and-mix the chocolate-butter mixture with the egg mixture.
- Add vanilla extract, then sift in flour. Mix well.
- Carefully pour the lava cake mixture into 4 x 6oz-ramekins. Tap the ramekins against the counter a few times to remove air bubbles.
- Add 1 cup cold water in Instant Pot. Place trivet in Instant Pot, then stack the ramekins on top.
- Pressure cook at High Pressure for 7 minutes + Quick Release.
- Carefully open the lid and avoid dripping.
- Cool ramekins. Sift powdered sugar on the cakes. (Optional: decorate with strawberries.) Serve immediately.
