Breakfast Wraps
INGREDIENTS
- ☐ 1 egg
- ☐ 2 egg whites
- ☐ Nonstick cooking spray
- ☐ 1 (15 1/4-ounce) can whole kernel corn, drained
- ☐ 1 (14 l/2-ounce) can diced tomatoes, well drained, squeezing out excess liquid
- ☐ 1 cup diced zucchini
- ☐ 1/4 cup sliced green onions
- ☐ 3 ounces low-fat, low-sodium shredded jack cheese
- ☐ 8 warm corn tortillas
- ☐ Toothpicks
PREPARATION
- Beat together egg and egg whites. Spray a skillet with cooking spray and heat over medium heat. Add eggs and scramble, breaking up into small pieces.
- Stir in corn, tomatoes, zucchini, onions and cheese.
- Spoon the egg mixture down the center of each tortilla; roll up and secure with a toothpick.
- Heat in the microwave for 30 seconds on high, or until warm and the cheese has melted. Makes 4 servings.
